The Best Vegan Banana Bread

My dad always used to make the best banana bread. He used one of those boxes where all you needed was a ripe banana and an egg and boom. Instant banana bread.But now that I’m vegan and eggs are no longer an option I figured why not try out a vegan banana bread from scratch?

I followed a recipe from The Baking Fairy.net and just replaced the flour for a gluten-free version just because that is what I had lying around the house.I loved the way this turned out because it was so moist and dense and almost like a banana cake rather than a bread. (That didn’t stop me from eating it for breakfast though.)

My only recommendation with this recipe would be to maybe bake it for about 5 more minutes. It was great right or of the oven, but after leaving it in the fridge overnight, it was clear that it hadn’t been baked all the way through. This isn’t dangerous since there isn’t any eggs in the recipe or something that would necessarily make you sick, but just a recommendation if you don’t want the bread to be too gooey. This can also be resolved by cooking each slice in the toaster over before you eat it. Overall, I will definitely be making this banana bread again and I hope you give it a try too!
